Mahi mahi with lentils and bacon.

I was asked to do a food demonstration/nutrition seminar to show how easy it is to cook dinner from a well stocked pantry. The problem was I had virtually none of the ingredients in my pantry for the three recipes I was asked to prepare. Even though the recipes were easy to make, having a hard time tracking down all of the ingredients defeated the purpose of an easy to cook meal. In contrast, over the weekend my friend tossed me a bag of lentils and asked me to build a meal around them. I found some frozen fish and vegetables, half an onion, bacon and some chicken broth. That's all I needed to make us a scrumptious meal.

Mahi Mahi with Lentils and Bacon
Serves 2 


  • 1 cup lentils
  • 2 cups chicken broth
  • 1 pound mahi mahi
  • 4 slices bacon, cut into small pieces
  • 1/2 onion, diced
  • salt 
  • pepper
  1. In a medium sauce pan, add the lentils and chicken broth. Bring to a boil. Reduce heat and simmer partially covered for 40 minutes until lentils are tender.
  2. In a large fry pan, saute bacon and onions over medium heat until bacon is cooked and onions are soft.
  3. Add fish to bacon, onion mixture and cook until just done, about 5 minutes
  4. Serve fish on bed of lentils. Top with onions and bacon.
  5. Season with salt and pepper.
